Winter Carrot Soup

I’m not really a fan of cooking! But when I do, I like really simple recipes! One of my favorite parts about winter is making soups. My go to is carrot soup, it is super easy and takes less than 30 minutes!

All you need is 4 carrots, a potato, onion, dried parsley flakes, and either a chicken bullion cube or chicken broth.

Start by peeling and chopping the potato, carrots, and onion.

Heat oil in large sauce pan and add onion. Fry for 5 minutes until softened (making sure not to burn them)

Stir in 1 tsp of ground parsley (the original recipe calls for ground cilantro but I couldn’t find any the first time I made it so I’ve been sticking with parsley). Add the potato and let cook for 1 minute.

Add the carrots

Add 5 cups of vegetable or chicken broth (I usually add 5 cups of water and 1.5 chicken bullion cubes)

Bring to a boil then reduce heat, cover, and simmer for 20 minutes until carrots are tender

Blitz until smooth.

 

RECIPE

Serves 4

4 Carrots
1 Medium potato
1 Medium onion
1 TSP ground parsley (or cilantro)
5 Cups chicken broth (or 5 cups water and 1.5 chicken bullion cubes)

Heat 1 tbs oil in a large pan, add 1 chopped onion, then fry for 5 min until softened
Stir in 1 tsp ground parsley and 1 chopped and peeled potato
Cook for 1 min
Add peeled and chopped carrots
Add 5 cups of chicken broth (I add 5 cups water and one chicken cube)
Bring to a boil then reduce heat, cover, and simmer for 20 minutes until carrots are tender
Blitz until smooth.
